3 shallots
¼ cup red wine vinegar
¼ cup apple cider vinegar
¼ cup sugar
4 oranges
2 ripe avocados
extra virgin olive oil
coarse sea salt or kosher salt

Directions:
Directions:
1.Peel shallots and slice them into very thin strips. In a small bowl, mix together the red wine vinegar, apple cider vinegar, and sugar until the sugar is dissolved. Add the shallot strips to the vinegar mixture, and set aside in the refrigerator for at least 1 hour, and up to 1 day.

2. Slice the oranges crosswise so that you see the entire cross-section of the orange

3. Peel and pit the avocados. Cut the avocado into thin slices.

4. To serve, arrange the orange slices on a platter, and then scatter avocado strips across them. Drain the shallots and scatter them across the oranges and avocados. Drizzle with olive oil, and sprinkle with coarse sea salt or kosher salt. Serve immediately.
