1 small onion, chopped
1 C long grain brown rice, rinsed & drained...*DO NOT SUBSTITE WHITE RICE OR ANY OTHER TYPE
1 Tbs dijon mustard
1 tsp garlic powder
1 tsp dried thyme
1/2 tsp salt
1/4 tsp black pepper
2 C low sodium chicken broth
1 lb boneless skinless chicken breasts
1 lb broccoli, cut into small pieces
1/2 C plain greek yogurt
1/2 C grated parm cheese
1 C shredded cheddar cheese

Directions:
Directions:
Place onion, brown rice, mustard, garlic, thyme salt & pepper in bottom of slow cooker.
Pour in broth and stir until well combined
add chicken to the cooker. Sprinkle chicke with additinal pepper.
cover & cook on high for 2 1/2 to 3 1/2 hours, until chicken is cooked through & richas absorbed almost all of the broth.
When slow cooking time is almost finished, cook broccoli.
When chicken and rice are done, remove chicken to a cutting board.
Add yogurt and cheeses to the ricde in slow cooker. Stir to combine.
Cut chicken into bite size pieces and add back to the cooker with the broccoli. Stir and serve.
