2 1/2 C cooked turkey or chicken
1/2 C dice onion
1 clove garlic, minced
2 C diced cooked or frozen vegetables ( peas, carrots, corn, green beans)
1 1/2 V gravy more or less as needed
1/4 tsp dried thyme
1/4 tsp black pepper
salt to taste
2 C mashed potatoes
1 C freshly grated sharp cheddar cheese
fresh minced parsley

Gravy
2 Tbs butter
2 Tbs flour
2 C chicken broth

Directions:
Directions:
Preheat oven to 350, spray a 1 qt casserole with nonstick spray
In med sauce pan over med heat, melt 1 Tbs butter or olive oil. Add onions and cook until translucent, stirring often, 4-5 min. Stir in frozen veggies, garlic, salt, pepper & thyme. Cook for 1-2 min.
Add turkey & gravy & stir until coated, the cook until heated through. Transfer to prepared dish & press into an even layer.
Heat mashed potatoes to lukewarm & spreadable. Stir in half of the cheese, then spread the potatoes over the turkey mixture, Top with remaining cheese.
Bake for 30 min or until top is golden and sides are bubbly. (for a more browned top, flip on the broiler during the last 5 min)
Garnish with parsley & serve warm.

Gravy
Melt butter in pan over med heat. Whisk in flour & cook whisking often until golden in color. Pour in chicken broth & bring to a boil, reduce heat to med low & simmer until thickened whisking occasionally about 5-7 min. Season with salt & pepper
