Crust

1 1/4 c graham cracker crumbs
1/4 c sugar
1/3 c melted butter

Mix all ingredients together in a springform pan. Press down on the bottom and up the sides a little to form the crust. Bake at 325 degrees for 5 minutes then cool.
 

Filling

24 oz cream cheese at room temperature
1 c sugar
5 eggs

Mix cream cheese and sugar together, then add eggs.

Pour filling into the crust and bake at 350 degrees for 45 minutes. Remove from oven and let stand for 30 minutes. It's important to wait at least 30 minutes or the topping will sink into the filling.
 

Topping

1 pt sour cream
3/4 c sugar
1 tsp vanilla

Mix and pour on top. Bake at 450 degrees for 10 minutes. Let cool down on the counter for a few minutes before placing in the refrigerator to cool before serving.

This is very good as is, but the addition of fruit toppings such as sugared strawberries, peaches, or blueberries adds to it. I also add 1/4 c of chopped pecans to the crust mixture sometimes.
