5 lbs Italian hot sausage
5 - 6 green bell peppers
1 lg white onion
1 cup chicken or bone broth
2 garlic cloves crushed
Olive oil
Salt and pepper (optional)

Directions:
Slice and de-seed peppers. Slice onion into strips. Crush garlic with the side of a knife and combine these three ingredients together in a bowl.
Oil a sheet tray (cookie tray) and place sausage on tray in a concentric circle.
Place peppers, onions and garlic in between the sausage. Do not put peppers and onions on top of sausage-don’t worry if you can’t fit it all on tray at this time. Place tray in a 375 degree oven for 15-20 minutes or until sausage darkens and peppers start to sweat. Remove from oven and cut sausage links in half so they are about 3” long.
Oil the bottom of a hotel pan or aluminum lasagna pan and put sausage and peppers plus the left over peppers and onions in it. Season with salt and pepper if you want however the sausage is salty enough without adding more so i never do. Pour broth over mixture and mix well. Cover with aluminum foil and put back into a 400 degree oven for another 25 minutes. Remove foil and continue cooking for 15 -20 more minutes. Check temperature of sausage with a meat thermometer making sure it’s at least 160 degrees to be safe.
Serve with hard crust Italian bread or rolls.
