2 tbsp. unflavoured gelatin
1/2 cup cold water
2 cups sugar
3/4 cup water
1 tsp. vanilla
Pinch of salt

Directions:
Soak gelatin in 1/2 cup cold water. Heat sugar and 3/4 cup water until sugar is dissolved. Add gelatin to syrup and bring to a boil (about 1 minute). Remove from heat and let stand until partially cool. Add salt and vanilla. Beat until stiff (about 20 minutes) For a lighter, fluffier marshmallows you can add 4 egg whites to the mixture before beating. Dust a 9 x 12 inch pan with icing sugar. Spread mixture in prepared pan and let set. When set cut into squares with a knife dipped in cold water and then roll square in cornflake crumbs.
