Ingredients:  
1 lb flank or sirloin Steak, cut into thin strips
2 eggs, beaten
¾ cup cornstarch
½ cup water
1 cup shredded carrots
2 T chopped green onion
¼ cup grated ginger (or more)
4 garlic cloves, shopped
3 T soy sauce
2 T wine, red or white
2 T vinegar
1 T sesame oil
¼ cup sugar
dash chili flakes

Directions:

1. Mix beef and eggs
2. Dissolve cornstarch in water and add.
3. In skillet or wok with 1 Tbsp oil, stir fry beef mixture, cook until crispy, set aside.
4. Put 1 Tbsp oil in wok, add carrots, onion, ginger,garlic and stir briefly over high heat. 5.Add remaining ingredients and bring to boil. Add beef and mix well.
6. Serve with steamed rice.
