Ingredients:  
1 turkey 10-14 lbs - soak turkey in brine, add water to cover, 18-24 hours
Brine - Need large bucket or picnic cooler with ice
2 quarts apple juice
1 cup kosher salt
2 T rosemary
2 T thyme
1 T sage
1 tsp course black pepper

BBQ - need aluminum roast pan (1 use 2 together)
½ cup melted butter
1 tsp black pepper
1 large onion, chopped
2 large carrots, chopped
2 celery stalks, chopped

Gravy- pan liquid plus chicken stock = 4 cups
¼ cup unsalted butter
¼ cup flour
2 Tbsp parsley
salt and pepper

Directions:
Directions:
Remove turkey from brine and rinse thoroughly. Coat with melted butter and pepper. Put in roasting pan breast side down, add onion, carrots, celery. Add turkey neck and giblets. Add stock.
Cook turkey covered on BBQ low heat 1 hour. Baste and cover wings and legs with foil. Close lid and continue another hour. Make gravy, add parsley and salt and pepper.
