3 cups or 1 lb spinach or 2 frozen pkgs thawed and sqeezed
6 eggs, beaten
1 tsp salt
½ tsp pepper
½ tsp oregano
1 cup feta cheese
1 cup Ricotta cheese
1 c parmesan or Romano
1 bunch fresh parsley
3 green onions
1/2 cup onions chopped
1/2 cup butter melted
12 Sheets filo pastry (makes 2)

Preheat oven 375º
Mix all ingredients except filo.
On baking sheet lay down 1 filo sheet, Brush with melted butter. Repeat 5 more times. do not butter top layer. Scoop half of filling down center. Fold over ends. Roll sides over to form a log. Brush with butter. Repeat with a second log. Bake 50 minutes.
