South African Rusks Recipe

1 lb. plus 2 tbsp. butter
2 cups brown sugar (packed)
2 cups buttermilk
3 large eggs
4 tbsp. baking powder
1 tsp. salt
1/2 cup raisins
1/2 cup sunflower seeds
5 cups bran flakes
1 cup wheat germ
1 1/2 cup rolled oats
6 1/2 - 7 cups flour

Directions:
Directions:
Melt butter and sugar together. Whisk buttermilk and eggs together, add to butter and sugar mixture. Add flour, baking powder and salt. Mix in remaining ingredients.
Spread in a large baking sheet. Cut into finger sized pieces. Bake for 45 minutes at 350ºF.

Take out of oven and cut the pieces again. Separate the pieces and place on 2 cookie sheets apart (not touching) and dry for 8 hours at 200ºF.

Note: Have used 5 cups raisin bran and did not add extra raisins. Can substitute wheat bran for wheat germ, which can be harder to find.
