Potato Croquettes |

Ingredients: 2 lbs. potatoes 2 eggs, beaten ½ cup Pecorino Romano cheese, grated
parsley, finely chopped breadcrumbs olive oil

Directions: |
Directions:1. Scrub potatoes. Place whole potatoes with skin in a pot, add water to cover. 2. Bring to a boil. Reduce heat to a bubbly simmer. Cook until tender. 3. Drain and allow to cool. Peel potatoes then mash well. 4. Add eggs, cheese and parsley to mashed potatoes. Mix well. 5. Roll into sausage-shaped rissoles, about 2 inches long. 6. Coat with breadcrumbs and layer on a baking sheet. Refrigerate for one hour. 7. Heat oil in a skillet. Add the croquettes, a few at a time, and fry until golden brown. 8. Transfer to a plate lined with paper towel. Serve as a side dish. |

Mashed Potatoes with Cream Cheese |

Ingredients: 8 pounds russet potatoes 1 (8 ounce) pkg. cream cheese, softened ½ cup butter, melted 2 tsp. salt ¾ tsp. pepper ¼ cup green onions, finely chopped (optional)

Directions:1. Peel and cube potatoes. Place in a large stockpot, add water to cover. Bring to a boil. Reduce heat. Cook, uncovered, until tender, 12-15 minutes. Drain. 2. With a mixer, beat cream cheese, ½ cup melted butter, salt and pepper until smooth. 3. Add potatoes to mixture; beat until light and fluffy. Sprinkle with green onions if desired. |

Potato Salad with Oil and Vinegar |

Ingredients: 1½ lb. potatoes (about 5 medium) ¼ cup red wine vinegar ¼ cup extra-virgin olive oil 2 tbsp. fresh Italian parsley, chopped salt

Directions:1. Scrub potatoes. Place whole potatoes with skin in a pot, add water to cover. 2. Bring to a boil. Reduce heat to bubbly simmer. Cook until tender. 2. Drain and allow to cool. Peel potatoes. 3. Cut each potato in half, then into ⅓-inch slices. 4. Place cooled potato slices in a 9x13 inch baking dish. 5. Drizzle vinegar and oil over potatoes. Toss gently to coat. 6. Season to taste with salt. Add parsley. 7. Let marinate at least 20 minutes before serving. |

The Mashed Potatoes with Cream Cheese can be prepared the day before and heated when ready to serve. Grandma's office manager, Leslie, gave this recipe as a way of preparing delicious mashed potatoes a day before a holiday celebration. It works well. The Potato Salad with oil and vinegar is an old family favorite. It is a great alternative to mayo based salad but is rich and satisfying.
