12 oz chick pea pasta (ha ha - I use regular - bowties or pipette)
1 clove garlic, very thinly sliced
3 1/4 oz marscapone cheese
4 oz baby spinach
1 t kosher salt (or pink, or something ground)
1/2 t pepper
1 t lemon zest (opt.)
red pepper flakes to taste (opt.)

Directions:
Directions:
1. Cook pasta according to directions to al dente. Drain, and reserve 1 c of cooking water. Use less salt in cooking water than normal.

2. Put pasta in large bowl - stir in marscapone, spinach, 1/2 cooking water, salt, pepper, garlic, and stir well until cheese is melted. Add additional liquid if necessary to loosen the sauce.

3. Divide into 4 bowls and top with lemon zest and red pepper, if you want.

Grown up mac and cheese comfort food! Delicious flavor. I don't like fresh uncooked garlic, so I slice the clove a bit thicker and then fish it out before serving.
