1 loaf of pumpkin cake. You can make your own or buy them at ShopRite or Costco in the Fall.

2 cups cold milk
1 pkg. instant vanilla pudding
1 can (15oz ) pumpkin
1/2 cup packed brown sugar
1 tsp. Vanilla extract
1 tsp. Ground cinnamon
2 cups heavy whipping cream

Cut the pumpkin loaf into 1 inch cubes and set aside

In a large bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes until soft set. Combine the pumpkin, brown sugar, vanilla and cinnamon. Stir into the pudding.

In another bowl, beat cream until it begins to thicken. Add sugar and extract and beat until soft peaks form.

Set aside 1/4 cup of cake cubes.
In a. 4 qt. Trifle bowl or glass serving bowl, layer 1/3 of the remaining cake cubes. Top with a third of the pumpkin mixture and 1/3 of the whipped cream.
Repeat layers twice. Crumble reserved cake cubes and sprinkle over top. Cover and refrigerate at least an hour before serving.
