1 onion, sliced
1 red pepper, sliced
1/2 cup fresh cilantro, roughly chopped
6 garlic cloves, minced
1 tablespoon plus 1 teaspoon olive oil
4 bone-in pork chops (2¼ lbs)
2 teaspoons cumin
Salt and pepper
1 oranges, halved

Directions:
Directions:
In a insta pot, toss the onion, bell pepper, cilantro and garlic in 1 tablespoon olive oil. Rub the pork chops with cumin, salta and pepper and place into the pot. Drizzle with 1 teaspoon olive oil, squeeze in the juice of 1 orange and add squeezed orange halves. Set the pressure cook to 40 minutes. Shred to pork and add back into the juices. Serve with rice and beans. Enjoy!
