Croque Madame (or Monsier) Recipe

4 T butter
4 T flour
2-3 C milk
1/2 t salt
dash of nutmeg
1/2 C parmesan cheese

Sandwich:

8 slices of thick bread
Stone ground mustard
butter
16 oz of aged cheddar
16 slices of Black Forest Ham
4 eggs

Directions:
Directions:
Melt butter in a pan. Once starting to bubble, add the flour and stir. Slowly add the milk while whisking and cook for about 10 minutes. Keep whisking while cooking. When sauce thickens, remove from heat and add rest of ingredients.

Lay bread out and add mustard to each slice. Stack 4 slices ham on each in a "fluffy" pattern. Do not just lay flat. Add half of the cheese to the sandwiches.

Have the oven pre heated to 475.

Melt butter in a non stick pan. Toast the sandwiches on each side. Then place on a cookie sheet. Pour sauce on the top so it just reaches the edges. Cover top with cheese and bake in oven for 10 minutes.

Meanwhile fry an egg to place on top.

This is a favorite dish for anytime of the day in France. If served without an egg it becomes a Croque Monsieur.
