4 white potatoes, boiled and sliced
3 Peruvian Yellow chilies (can use habanero or scotch bonnet chili)
1/2 can of evaporated milk
8 soda crackers
200grams of white cheese
Oil
3-4 T sugar
3 hard boiled eggs
Black olives
lettuce leaves

Directions:
Directions:
Cut chilis and remove seed and membrane. Put in boiling water and add sugar. Boil for 20 minutes covered. Take out, let cool and remove rind if tough.
Put in blender and add 3 T oil. Blend.

Add soda crackers and blend.

Add cheese and blend. Add evaporated milk and 1 more T of oil. Blend. add Salt and Pepper as needed.

Put sliced potatoes on a a plate covered with lettuce leaves. Pour sauce over top and decorate with sliced eggs and olives.

This is a standard dish in Peru and is served cold. Leftovers can be heated and topped with eggs for breakfast.
