1/4 c. plus 3 T. all-purpose flour
4 slices artisan white sandwich bread (torn into 1-inch pieces)
1 tsp. salt
1/2 tsp. pepper
1/4 tsp. cayenne pepper (optional)
3 large eggs
1 lb. medium-sized fresh asparagus, woody ends cut off
Peanut or vegetable oil for frying

Place 1/4 c. flour in a shallow dish. Combine the 3 T. flour, bread pieces, salt, pepper, and cayenne pepper into a food processor and pulse until finely ground. Transfer mixture to a large ziplock bag. Whisk together eggs and 1 T. water in a shallow dish.

Rinse asparagus, but do not dry - the water will help the flour to adhere. Next, coat them in flour, 2 or 3 at a time, then dip them in the egg wash; then place them in the ziplock bag, 2 or 3 at a time, and shake bag to coat them with the breadcrumbs. Lay them on a baking sheet until ready to fry.

Pour at least an inch of oil into a Dutch oven or heavy frying pan. Heat oil to 350ºF. Line a plate with paper towels. Fry asparagus in batches for 1 to 2 minutes for each batch, until golden brown. Then place on paper towel lined plate to drain. Ranch dip is good with this.
