8 lemons
1 litre Alcool
4½ cups sugar
4 cups boiling water

Remove the yellow peel of the lemons, avoiding the white pith. (Vegetable peeler works well.) Place the peels and the alcohol in a hermetically sealed jar in the dark for 2-4 weeks. This is called leeching.
Remove the lemon peels from the alcohol and discard. Prepare the simple syrup by adding sugar to the boiling water and stirring until dissolved. Cool. Mix the syrup and alcohol together. Bottle and seal well. Let rest one month. Filter with cheesecloth and move to smaller bottles for gift-giving.

Lemoncino (or its cousin Lemoncello) is an Italian lemon liquer. Lemoncino is traditionally served chilled as an after-dinner drink. Storing it in the freezer ensures the icy temperature. Serve alone or over ice. Unfortunately, Alcool isn't sold in Nova Scotia. Find a friend who can bring it home from Quebec. :-)
Note: I use a juice container and duct tape for the hermetic seal.
