Ingredients: For the crust: 1 cup flour ½ cup ground or very finely chopped pecans ¼ cup butter-melted
Lemon Delight layers: 8 oz cream cheese 2 ½ cups thawed cool whip 2 1 oz packages instant lemon pudding 1 tbsp lemon juice 3 cups milk 1 cup powdered sugar 3 tbsp finely chopped pecans (to sprinkle on top)

Directions:1. In a medium size mixing bowl, combine the flour, chopped pecans and melted butter and mix well. (Make sure the pecans are ground or chopped very fine to ensure that the crust will stick together!)
2. Press the pecan mixture into a 9x13 in baking dish. 3. Bake at 350º for 15 minutes. 4. With an electric mixer, mix the cream cheese and powdered sugar together until it is smooth and creamy. 5. Gently fold in 1 cup of cool whip into the cream cheese mixture. 6. Spread the cool whip mixture over the prepared crust. 7. Whisk the pudding packets and milk together in a medium mixing bowl. 8. Add lemon juice and continue to stir until the mixture begins to thicken. 9. Spread the lemon pudding mixture over the cream cheese layer. 10. Spread the reaminig cool whip over the lemon pudding layer. 11. Sprinkle additional finely chopped pecans over the cool whip layer. 12. Refrigerate for at least 4 hours before serving. Enjoy! |

Notes: If someone has a nut allergy, you can substitute the nuts for golden oreos to make the crust and to sprinkle on top of the cool whip!
