20-25 tomatoes
3 green peppers
6 white or yellow cooking onions
2 lb. brown sugar
1/2 tsp. ground cloves
3 T. cinnamon
2 tsp. ginger
3 T. salt
3 c. vinegar
3 c. water

Directions:
Directions:
Peel tomatoes, quarter onions and peppers in 6 qt. pot. Add remaining ingredients and mix together. Bring to a boil. Cook over medium heat for two to three hours.

If tomatoes are watery, I use only 2 cups vinegar and 2 cups water. I like to cook this until it is reduced by half. Will make 5 or 6 pints. I like this especially on pork, but is good in meatloaf, and if I’m in a crunch and have put up a lot, I’ll put in a pint with a couple of cans of pork and beans for baked beans.
