1 lb. ground beef
¼ c. onion, diced
½ tsp. garlic, minced
½ c. pork rinds crushed
1 egg
1 T. Italian seasoning
½ tsp. black pepper
1 T. mustard powder
1 tsp. coconut aminos or soy sauce
3 slices bacon, diced and cooked
1 c. mozzarella cheese or your choice cheese
2-3 T. sugar free ketchup

Add beef, onion, garlic, pork rinds, egg, Italian seasoning, black pepper, mustard powder and coconut aminos to a large bowl. Mix until combined.

Spray a bread pan with non stick cooking spray. Place ½ the hamburger mixture into the bottom of the pan. Next sprinkle on top the bacon and cheese in an even layer. Place the remaining hamburger on top, pressing down firmly to bring the layers together. Using a pastry brush (or spoon brush) the top of the meatloaf with ketchup.

Grab a sheet of aluminum foil and lay it on a flat surface. Using a spatula, scoop the meatloaf mixture from your pan. Place on aluminum foil and fold up all the sides. Place 1 c. of water and the trivet into the bottom of your Instant Pot. Add your meatloaf in the foil boat. Place InstaPot on high pressure for 20 minutes. Be sure to seal the valve.
Allow to cook and do a natural release for 5 minutes. Release the seal to vent and allow to release pressure. Top with parsley for presentation and enjoy.
