¾ cup coconut milk
½ cup plain Greek yogurt
½ cup smooth peanut butter
¼ cup fresh lime juice (2 limes)
2 tsp packed brown sugar
1 garlic cloves
¾ tsp kosher salt
¼ cup cilantro leaves plus some for garnish
2 Tbsp chopped jalapeno (seeds for more heat)

1 lb chicken breasts cup into 1 inch cubes
12 firm ripe apricots, halved
fresh ground pepper
¼ cup chopped peanuts
Lime wedges

Directions:
Directions:
1. In blender, combine 7 ingredients and blend til smooth, Add cilantro and jalepeno and mix briefly. Transfer ½ cup marinade to bowl, cover and chill.
2. Place remaining marinade in a reasalable plasitc bag, add chicken , seal and turn to coat. Chill for 3 hours or overnight.
3. To cook, hold 2 skewers parallel to each other and thread chicken cube and then 1 apricot half. Repeat. 2 chicken pieces and 2 apricots each skewer. Brush with marinade.
4. Grill. Serve with remaining marinade as sauce. Top with peanuts, cilantro and lime wedges. Serve with rice.
