3 lb. potatoes or whatever you have
Velveeta™ cheese, one quarter of 2 lb. box
1 c. milk
3 Tbsp. corn starch
Red peppers or pimentos if desired
White pepper as desired
a little salt if desired

Directions:
Directions:
Boil potatoes the day before and cool. Peel and slice thickly or cut into squares. Cut cheese roughly into squares and melt slightly in microwave with 1 c. milk. Stir corn starch and 3 Tbsp. more milk together and whisk into cheese. Heat in 1 minute increments, stirring until thick. If too thick, add a little more milk. It should be fairly runny as it thickens when baking. Stir in red peppers or pimentos as desired. Place potatoes into greased casserole dish (can use cooking spray). Stir together. Bake at 350º uncovered for 1 hour.
