1 c. shortening
2 c. sugar
2 c. pumpkin
3 ½ c. flour
½ tsp. salt
2 tsp. baking powder
2 tsp. soda
2 tsp. cinnamon

Directions:
Directions:
Cream shortening and sugar together. Add pumpkin and mix. Add all dry ingredients and mix well. Chill a few hours or overnight. Roll out and cut with a pumpkin cookie cutter. Bake at 375º. Don't overbake so they will be moist. When cool, frost with orange-colored frosting. Can be decorated with candy corn to make eyes and nose for Halloween cookies.

Grandma's notes: Chilling is very important. Makes it easier to handle. I work in little more flour and use plenty of flour to roll out and it doesn't make them dry. "Don't overbake" is an understatement. Don't let them even get brown. Just touch them- they should be soft, but not doughy.
