Chicken schnitzel ( Elads favorite crispy chicken )

4 chicken breasts- boneless skinless.
1/2 cup flour
2 cups Panko - May need more depending on the size of your chicken
2 eggs - beaten
1 tablespoon mustard
1 teaspoon salt
1/2 teaspoon pepper

Oil for pan frying: I use coconut oil OR olive oil and butter together. Start with 1/4 cup but you may need more depending on size of your pan.

Pound the chicken breast until 1/2-1/4 thick depending on the thickness you want. All should be even. Sprinkle salt and pepper on the chicken.
Get 3 containers:
In one add flour, salt and pepper
In the other mustard and eggs- whisk
In the third, Panko

Dry chicken well, mix into the flour. Shake excess. Then dip it into egg. Then dip into the Panko. Push down to get the Panko to stick. Place in a wire rack and repeat with the other chicken breasts. If you need more flour or Panko just add more.

Add 1/4 cup of oil (or butter with oil) to pan and heat on medium. When hot place one chicken at a time or two if you have room. Turn over at 3-4 minutes. Take chicken out and let rest. Repeat until all chicken is cooked.
Serve with rice and beans with a side of “pink sauce” - which is just mayo and ketchup mixed together. My kids also like it in a sandwich with the pink sauce.

This is my kids favorite “crispy chicken”. It’s my go to recipe when I don’t know what to make because it’s easy and kids love to help make it! You can all do this with thin cuts of meat. Enjoy!
