4 chicken breasts
1 large onion
3 cloves garlic
2 Tbsp minced gingerroot
1 Tbsp curry powder
2 cups chicken stock
˝ cup unsweetened coconut
˝ cup mango chutney or just mango cubed
1 Tbsp Tomato paste
1 Tbsp lemon juice
pinch salt and pepper
4 tsp corn starch
4 tsp water

Directions:

1. Cut chicken into cubes, set aside
2. In skillet, sauté onion, garlic, ginger and curry for 2 minutes. Add chicken.
3. Add stock, coconut, mango and tomato paste: bring to boil. Reduce heat and simmer for 5 minutes. Add lemon juice, salt and pepper, simmer 4 minutes until chicken is not longer pink inside.
4. Dissolve cornstarch in water; stir into skillet and bring to boil. Reduce heat and simmer for about a minute until thickened.

Serve with rice or noodles.
