1 cup craft sweet honey bbq sauce
1/4 cup brown sugar
2 1/2 tablespoons ghost pepper wing sauce
1/4 cup vinegar
1 tsp crushed red pepper
1/2 tsp cayenne pepper
1 rack baby back ribs
1 pack grill mates zesty herb dry rub
mustard
2 onions
2 garlic buds
2 apples

Directions:
Directions:
Trim fat from ribs and remove membrane on bone side of ribs.
Dry ribs with paper towel and rub a thin coat of with yellow mustard.
Cover ribs with grill mates zesty herb dry rub. Let ribs sit while lighting smoker and preheating to 350º. I use lump charcoal and hickory wood chunks. Once smoker is preheated to 350º place ribs bone down. Cut 1 onion and 1 apple in half and place in hot coals with 1 garlic bud. While ribs smoke combine the ghost pepper sauce, bbq sauce, brown sugar. vinegar, crushed red pepper and cayenne pepper in sauce and simmer for about 5 minutes. After ribs have smoke for 45 minutes mop sauce to cover ribs. Add wood and char coal as needed to maintain 350 º. Mop ribs every 30 minutes with sauce until internal temperature reaches 185º - 195º Around halfway done place the remaining onion, apple and garlic in the coals.
