4 large or 6 medium sweet potatoes peeled and cut in 2 inch chunks
3/4 c packed brown sugar
1/2 cup white sugar
1/2 c butter
2 T orange juice
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt

Directions:
Directions:
Preheat oven to 350º. Lay sweet potatoes flat in a 13 x 9 casserole dish. Sprinkle sweet potatoes with salt. Set aside. Melt butter in a saucepan. Add sugars, cinnamon, nutmeg. Stir until sugar has dissolved. Remove from heat and add orange juice. Pour mixture over the sweet potatoes. Cover tighly with foil and place in preheated oven. Bake for 30 minutes with the foil on. After 30 minutes, remove the dish from the oven, remove foil and stir the sweet potatoes. Put back in oven and cook for an additional 30 minutes or until the sweet potatoes are fork-tender.
