Ingredients: self rising flour mix-Gluten Free
Ingredients 4 cups superfine brown rice flour 1 cup potato starch 1 cup tapioca starch 3 teaspoons xanthan gum 9 teaspoons baking powder 3 teaspoons baking soda
Begal Bites 1 cup self rising flour 1 cup yogurt
About 4 ounces soft goat cheese - cold, or feta- or cheese of choice
1/4 cup sesame seeds * optional Dash of oil Splash of milk of choice

Directions:Heat oven to 375C Divide cheese into 8 pieces and set in freezer to remain cold.
Measure flour mix into bowl. Stir in yogurt. Mix with fork till well combined. Put bowl in freezer for 10minutes.
Pour sesame seeds into a small bowl. Optional- add a bit of sea salt and spices or leave plain Combine dash of oil and splash of milk in small bowl. Divide dough into 8 balls. Flatten each ball. Place cold cheese in Center then reroll into a ball. Lightly till the top of the ball into seeds. Place on silicone tray on baking sheet. Repeat. Lightly dip the pastry brush into the liquid and touch the top of the seeds ( to promote browning). Bake for 15- 20 minutes till lightly browned. Serve warm so the cheese melts when you bite into the biscuits. |

Notes: I adapted this from a “regular” recipe and was super pleased with the results. I used Greek yogurt which made the batter sticky but very rollable. Next batch- feta cheese with pesto filled.
