½ cup chicken stock
¼ cup sugar
3 Tbsp lime juice
¼ cup fish sauce
2 Tbsp ketchup
¼ tsp hot pepper flakes
1 chicken breast (or pork) small cubes
6 oz firm tofu
1 egg beaten
3 cloves garlic, minced
8 oz large shrimp
1 sweet red pepper
2 cups sprouts
½ cup cilantro leaves
6 green onions chopped
¼ cup unsalted peanuts, chopped.

Directions:
Directions:
1. Whisk stock, sugar, fish sauce, lime juice, ketchup and hot pepper flakes, set sauce aside.
2. In skillet cook beaten egg until set. cut in thin strips and set aside.
3. Sauté garlic, shrimp and chicken or pork for 3 minutes. Add to egg.

4. Add a little oil to pan and sauté tofu and red pepper.
5. Pour in sauce, add egg mixture, sprouts, cilantro and half green onions. Stir fry for a few minutes.
6. Serve with noodles and garnish with peanuts and remaining green onions.
