Arrange on a platter:
3 potatoes, peeled and sliced, and steamed 10 minutes, cool
1 bunch spinach or lettuce
2 cups bean sprouts
2 cups cucumber sliced

Peanut Dressing
¼ cup peanut oil
2 medium onions
2 garlic cloves
1 chili, red or green
½ cup peanut butter
1 can cream of coconut
2 Tbps lemon juice
2 tsp brown sugar.

Garnish
Fried shrimp chips
Cilantro leaves

Directions:
Directions:
For the dressing, heat oil in skillet and saute onions, chilli and garlic. Stir in remaining ingredients. Bring to boil, reduce heat, summer until thick, 10 minutes. Serve over salad and garnish with shrimp chips and cilantro.
