3 c sugar
1/2 c white Karo syrup
1/2 c cold water
2 large egg whites
1 tsp vanilla
1/2 c chopped nuts

You don't have to beat this recipe as much and can use a hand mixer.

Cook over low heat until Soft Ball Stage; 230º.

In a separate cold bowl, beat 2 large egg whites until stiff. Pour in 1 cup of hot syrup mix slowly, to egg whites; using a mixer to beat while you add your syrup.

Continue beating in remaining syrup until brittle, 290º. Add vanilla and nuts; gently fold in.

Drop by teaspoonfuls onto wax paper that has been sprayed with non-stick cooking spray

At Christmas, Mom would add food coloring to some batches. My favorite, was when she added Black Walnuts from our tree or cherries. This was our Christmas treat.
