1/3 c heavy whipping cream
2 c Ghirardelli double chocolate chips
6 T unsalted butter, cut into small pieces

Coating:
1/3 c Ghirardelli Unsweetened Cocoa or 3/4 c finely chopped almonds or pecans.

Directions:
In a small saucepan bring cream to a simmer. Remove from heat and stir in butter.

Microwave chocolate chips for 1 minute. Remove and stir. If not completely melted repeat process in 30 second intervals.

Add melted chocolate to cream mixture. Stir until smooth. Pour mixture into a shallow bowl.

Cool, cover and refrigerate until firm, at least 2 hours.

Pour coating onto a pie plate.

Dip a melon baller or small spoon into a glass of warm water and quickly scrape across surface of the chilled mixture to form a rough 1 inch ball.

Roll the rough ball in your hands to form a smooth ball. Drop ball into the coating. Repeat with other balls.

Gently shake the pie plate to coat the truffles evenly.

Refrigerate up to 2 weeks, or freeze up to 3 months.
