Spinach, Potato Fritita ( Yum) Recipe

3 Tbsp canola oil-divided
2 tsp salt, divided
1/2 tsp pepper
1 russet potato
1/2 med. yellow onion chopped
2 cloves garlic finely chopped
1 10 oz. bag frozen spinach, thawed and well drained
4 eggs
1 c. milk
1/2 c shredded mozzarella cheese

Oven to 450
slice potato thinly
using 2 Tbsp canola oil and 1 tsp salt, thoroughly cover potato, place on cookiie sheet separately, bake for 8 min. Remove from oven and lower to 350
Using remaining oil put in skillet, saute onion 2 min, add garlic and saute another 2 min
Add drained spinach and toss, cooking another 2 min.
whisk eggs, milk, salt, pepper, add cheese and spinach mixture.and potatoes
Pour into sprayed baking dish, bake for 30-35 min.

I fyou want it with more spice, Creole spice is good or your choice.
