3 salmon fillets
2 tsp olive oil
2 tbsp butter
5 cloves diced garlic
1 sm sweet onion
⅓ c broth
5 oz jar sun-dried tomato, drained
1¾ c heavy cream
salt & pepper
3 c baby spinach leaves
½ c grated parmesan
1 tbsp fresh chopped parsley

Directions:
Directions:
Sear seasoned salmon in oil, 5 min ea side, flesh side first.
Remove.
Melt butter in pan juices, add garlic, onion, tomatoes.
Add broth and reduce.
Low heat - add cream, stir and simmer. Season to taste.
Add spinach, then cheese. Simmer to melt.
Add salmon filets, sprinkle with parsley, spoon sauce over.
Serve over bed of rice, pasta, or steamed veggies.
