Chicken Breast Pillards
Flour
1 heaping t. Corn Starch
Season Salt
Onion Salt
Paprika
Salt & Pepper, to taste

Brioche Buns

Coleslaw Mix
Basil
Cilantro
Red Onion, thin sliced
Serrano Pepper, minced
2 T Mayonnaise
2 T Sambal
1T Rice Wine Vinegar

Directions:
Directions:
Mix together flour with spices and corn starch in a ziplock bag. Heat enough oil to fry chicken. Dredge Pillards in seasoned flour. Allow to rest in the bag of flour. Dredge again. Fry until well browned and crisp. Drain on paper towels.
While chicken is frying; toast buns, mix coleslaw with chopped herbs, onion and chile.
In a separate bowl mix together mayo, sambal and vinegar.
Spread buns with a bit of the mix then mix the remainder into the coleslaw. Add a Tablespoon of water if coleslaw is too thick.
Put chicken on the bun and top with the coleslaw. Enjoy.
