1 medium yellow onion, diced
1/3 cup all purpose flour
1 Tbsp dried basil
4-5 cloves of garlic, minced
3 Tbsp olive oil
2 cups chicken broth
2 (14.5 oz) cans diced tomatoes
1 ½ lbs boneless, skinless chicken breasts
1 tsp salt
1/2 tsp pepper
4 cups frozen cheese tortellini (or you can use fresh)
1/2 cup Parmesan cheese
1 cup half and half

Directions:
Directions:
In a skillet with olive oil, add the onions, garlic, carrots and celery to cook slowly and become transparent. Add, the flour and basil. (The mixture will be pasty and look weird but don’t worry it will all be okay in the end). In a soup pot, add the onion mix, broth, salt, pepper, warm half and half (to prevent curdling), parmesan cheese and tomatoes.

In the same skillet, cook the chicken with some olive oil or butter and once cooked add it to the soup pot.

Cook the tortellini separately (not in the soup pot) and cook the gnocchi separately as well.

Ladle into serving bowls and enjoy!
