4 egg whites
¼ tsp. cream of tartar
1¼ c. sugar
½ tsp. peppermint extract
Red food coloring
Green food coloring

Directions:
Directions:
In medium-sized bowl, beat egg whites and cream of tartar until foamy. Beat in sugar, a small amount at a time; beat well after each addition. Beat in peppermint extract. Continue beating until mix stands in stiff peaks.

Divide in half. Tint half red and the other half green. Spoon tsp. onto heavy brown paper on cookie sheet. Bake slow 250º 30-40 minutes or until set, not brown.
