1 cup butter, softened to room temperature
1/4 tsp salt
1/2 cup sugar
2 tsp vanilla extract
2 cups flour
1 cup chopped, toasted pecans
2 cups powdered sugar

(there is no leavening in this recipe)

Directions:

Preheat oven to 350º

Beat butter, sugar and salt until fluffy. Beat in vanilla. Beat in flour until well combined. Stir in pecans. Shape by teaspoonfuls into balls. Place 1" apart on ungreased cookie sheets. Bake for 12 minutes or until just starting to brown lightly around the edges. Transfer to a cooling rack. While still warm, roll each cookie in powdered sugar, return to rack. When cookies are cool, roll in powdered sugar again. Store in airtight container.

These are similar to "Russian Tea Cakes" or "Mexican Wedding Cake" cookies. You can make a completely different cookie by omitting the pecans and use 1 cup mini chocolate chips instead.
