Ingredients: Egg Roll Filling 1 tsp. Olive Oil 1 pound chicken cubed, thighs or breast, boneless and skinless, chopped into bite size pieces 1 cup red onion, diced 1 tsp. cumin 1 tsp. chipotle chili powder 1 tsp. oregano ½ cup corn, frozen ½ cup black beans, canned 1 cup red bell pepper, diced 4 oz. green chilis, diced 1 cup broccoli slaw, shredded 3 cups coleslaw mix ½ cup cilantro chopped 1 tbsp of lime juice 1 tbsp soy sauce
Chipotle Ranch Dressing: ¾ cup greek yogurt 1 tsp garlic powder 1 tsp onion powder 1 tsp dried dill 1 tsp dried parsley 1 tsp chipotle chili powder 1 tsp apple cider vinegar 3 tbsp water

Directions:1. Lightly spray a large skillet with nonstick cooking spray. 2. Add the cubed chicken, onions, cumin, chili powder and oregano to the skillet and cook until the chicken is browned and the onions are beginning to soften. 3. Add the corn, black beans, bell peppers, green chilis, broccoli slaw and coleslaw to the skillet. 4. Cover the skillet and let it simmer on medium heat for 10-15 minutes or until the cabbage shrinks. 5. While cooking, mix all the ingredients of the chipotle ranch dressing together in a medium size bowl. 6. Remove the lid from the skillet and stir in the soy sauce, lime juice and the freshly chopped cilantro. 7. Serve with 2 tbsp of the chipotle ranch dressing and any other desired toppings. Enjoy! |
