3 cups cooked chicken, shredded
10½ oz. can Cream of Chicken Healthy Request condensed soup
½ cup fat-free sour cream
2 tbsp skim milk
1 tsp garlic powder
1 tsp onion powder
1 tsp dried parsley
½ cup reduced fat shredded mexican cheese
½ cup frozen peas and carrots
10 reduced fat ritz crackers

Directions:
Directions:
1. Preheat oven to 350º.
2. In a large mixing bowl, combine soup, sour cream, milk, garlic powder, onion powder and parsley and mix well.
3. Cook the vegetables in the microwave for a couple minutes to soften them.
4. Add the chicken and vegetables to the soup mixture and mix well.
5. Spray a pie dish or a 9x13 inch baking dish with non-stick cooking spray.
6. Add the chicken mixture to the prepared dish.
7. Sprinkle the cheese over the chicken mixture.
8. Place the Ritz crackers in a ziplock bag and crush the crackers.
9. Sprinkle the crushed Ritz crackers on top of the cheese.
10. Spray the crackers with a non-stick cooking spray.
11. Place the baking dish in the oven.
12. Bake for 30-35 minutes or until the crackers have turned golden brown.
