¼ cup of olive oil
2 tsp pomegranate molasses
1 tbsp allspice
1 tsp coriander
¾ tsp cinnamon
1/8 tsp cardamon
8 cloves garlic
Pinch of red pepper flakes
3 to 4 chicken leg quarters
Two to three medium sweet potatoes

Heat oven to 450F.
Mix olive oil, 1 tsp of the pomegranate molasses, and the spices in a large bowl. Add chicken and sweet potatoes; stir to coat.
Oil a large sheet pan. Place garlic cloves in the middle of the pan. Place chicken on and around the garlic. Spread sweet potatoes around the outside of the chicken.
Roast for 40 to 45 minutes, until chicken is cooked through and sweet potatoes are done. Remove chicken to serving platter.
Mash garlic in pan and add ¼ cup water or wine. Stir scraping up the browned bits and mix. Pour sauce over the chicken and drizzle with more molasses. Sprinkle parsley on top.
