1/2 C Dijon mustard
1/4 C maple syrup
1 Tbs rice vinegar
5-6 chicken thighs, bone-in, skin-on
Salt and pepper

Directions:
Directions:
Preheat the oven to 450°. Mixed together the Dijon mustard, maple syrup and rice vinegar., set aside. Salt and pepper the thighs then place them in a baking dish. I used 2.5 quart oval casserole dish 13 by 9 by 4 " deep. Pour the maple mustard mixture over the thighs, turning them a couple of times to fully coat. Place there baking dish with the chicken thighs, uncovered, in the oven, and bake for 40 minutes or until the meat thermometer reads 165°. Baste the chicken thighs with the sauce 2 are 3 times during the last 20 minutes of baking. Serve the chicken thighs immediately, on plates, topped with the remaining sauce from the baking dish.
