6 redfish fillets
1 - 1 1/2c. skim milk
1/2 - 1 tsp. salt
1/4 tsp. pepper
pinch cayenne pepper
1/2c. flour
2 Tbs. corn oil margarine
2 - 4 Tbs. corn oil
1/2 - 3/4c. sliced almonds
1 - 1 1/2 tsp. Worcestershire sauce
2 - 6 drops Tabasco
2 Tbs. fresh lemon juice
2 Tbs. fresh minced parsley

Directions:
Directions:
1. Soak fillets in milk for 30 minutes; drain
and dry well. Season with salt, pepper and
cayenne pepper. Dust lightly with flour and
set aside.

2. Melt 1 tablespoon margarine in a heavy
skillet; add oil. When oil sizzles, sauté fillets
2-3 minutes per side. Cook until golden
brown; do not overcook! Drain fillets and keep
warm while preparing sauce.

3. Drain skillet and add remaining margarine.
When melted, add almonds and cook over low
heat until golden.

4. Add remaining ingredients except parsley;
heat well and pour over fillets. Garnish with
parsley.
