Ingredients: 4 thin boneless chicken breast cutlets 1/2 to 3/4 cup dry roasted macadamia nuts, chopped 2 cups panko bread crumbs 1/4 cup flour 2 eggs 2 cups heavy cream 1/4 to 1/3 cup low sodium soy sauce 1 tbsp cornstarch 1-1/2 tbsp water salt & pepper

Directions:CHICKEN: Trim chicken as needed. In shallow bowl, whisk eggs. In second bowl combine chopped nuts and panko crumbs, stirring to combine. Place flour on a medium plate and add salt & pepper to taste. Lightly flour chicken, then dip into egg mixture, making sure to coat both sides well, and then coat with the nut/panko mixture. Once all cutlets are breaded, heat a large saute pan with the bottom coated in approx. 1/8" vegetable oil. Add chicken and saute on both sides until golden brown (chicken will not be fully cooked). Transfer chicken to a baking sheet with a wire rack (so that the chicken does not directly touch the backing sheet). Bake at 350 degrees for approx. 12-15 minutes. Prepare Shoyu Cream Sauce while chicken finishes cooking in the oven SHOYU CREAM SAUCE: Place heavy cream and soy sauce in pan and bring to a boil, stirring constantly. Turn down to low and simmer for 2-3 minutes. Remove from heat. Mix cornstarch and water together and slowly pour into cream mixture, stirring constantly. Sauce will thicken slightly upon standing. Sauce is meant to be poured over the chicken at the time of serving. |

Notes: TIPS: You can substitute olive oil for the vegetable oil, but must be careful of the heat setting used because olive oil does not have as high a heat threshold. Other soft nuts with a mild buttery flavor, such as cashews, can be substituted for the macadamia nuts, but harder nuts like almonds, pecans, walnuts, etc are not recommended. Do not attempt to fully cook the breaded chicken in the saute pan...the nuts will burn long before the chicken is completely cooked...and is why the cooking is finished in the oven. Best served with mashed potatoes (also delicious smothered in Shoyu cream sauce) and roasted green beans.
