Fresh Asparagus - 8 oz. (Fresh cut green beans can be substituted if you don't like asparagus) Don't use canned anything, it won't work for this recipe.
Olive Oil - 4 Tbsp.
Garlic - 3 cloves Minced
Butter - 2 Tbsp. chilled.
Salt and pepper - to taste

Cut the ends off your asparagus, to about 1 inch. The ends are usually very fibrous and none edible. If you're not sure how far to cut, take one asparagus and attempt to fold the root end up to the top end. Usually the asparagus will snap off where the fibrous end is at.

In a large pan on high heat, add your olive oil and allow to heat up until you see the first wisps of smoke. Add your asparagus and a dash of salt and mix thoroughly with tongs. Cook the asparagus for about 5-8 minutes on medium heat. Turn enough so that the skin starts to blister and blackened but does not burn through. Remove from heat and add chilled butter, salt and pepper and mix until the butter is incorporated but not cooked.
