Creamy Bay Scallops in Pasta Recipe

Ingredients: Uncooked pasta - 8 ounces ( I prefer angel hair, but you can use whatever you like) Bay Scallops - 1 pound (can be found frozen in most grocery stores) Thawed, and dried off with a paper towel so there's no extra moisture. Vegetable Oil - 1 Tbsp. Butter - 2 Tbsp. Garlic - 3-5 cloves minced 1 Lemon - (Zest with a micro plain, and juice) Zest: 1 tsp. Juice: 2 Tbsp. Sherry - 1/2 cup (I use medium bodied sherry) Heavy Cream - 1 cup Cheese (I like Asiago, but Parmigiana is equally as good) Approx. 2 cups separate.

Directions:While your pasta is boiling, heat a large pan to high heat and add your vegetable oil. Allow it to get hot until you see the first wisps of smoke and add your bay scallops face side down in a single layer. Let them sear on high for about 60 seconds, or until they are golden brown. Stir but don't worry about searing the other side. Add your butter and let melt. Add your garlic and stir until aromatic, approx. 30 seconds. Add your lemon zest and stir until aromatic again. Stir in your sherry and let reduce, about 3 minutes or so. Pour in your cream and stir until the mixture simmers, reduce heat to medium-low. Add your lemon juice and 1 cup of your cheese, stir until combined.
At this point your pasta should be done, drain it and add to the bay scallops. Mix pasta until it takes up most of the sauce. Plate the Pasta and garnish with the remaining cheese. (can make about 2 full servings or 4 appetizer servings.) |

Notes: (Note: This recipe is pretty simple, but you will move fast to create it. It takes approximately 10 minutes to do everything. Which is a good cook time for most dry pasta, I recommend starting your pasta at the beginning and follow directions on the box. I also strongly recommend prepping all of your ingredients out first and having them in separate measured bowls, etc. so you can throw the ingredients in at the appropriate times)
