2 green onions sliced
1 clove garlic minced
pinch salt and pepper
¼ tsp dried thyme
1 cup ricotta cheese
4 eggs
¼ cup shredded Gruyere cheese
2 Tbsp fresh parsley

Directions:

1. Trim asparagus, cut into 2 inch lengths (2 cups)
2. In skillet, in a little butter fry onions, garlic, salt , pepper, thyme and asparagus until
tender...5 min. Pour into oven proof casserole bowl,
3. Whisk ricotta and eggs, stir in gruyere and parsley. Pour on top.
4. Bake 20 minutes at 400º
