4 ripe Bartlett pears, peeled and diced (about 3 cups)
1 T sugar
3 large eggs
2 cups sugar
1¼ cups vegetable oil
3 cups all purpose flour
1 t salt
1 t baking soda
1½ cups pecans, coarsely chopped
2 t vanilla extract

Caramel Glaze:
1 cup firmly packed brown sugar
½ cup butter
¼ cup evaporated milk

Preheat oven to 350º
TOSS together pears and 1 T sugar; let stand 5 minutes.
BEAT eggs, 2 C sugar, and oil at med. speed with electric mixer until well blended.
COMBINE flour, salt and baking soda and add to egg mixture beating at low speed until blended. Fold in pears, chopped pecans and vanilla. Pour batter into a greased and floured 10-inch Bundt pan. (I use Baker’s Joy baking spray with flour)
BAKE at 350º for 1 hour or until wooden toothpick inserted comes out clean.

Remove from pan onto a plate and turn over again onto your cake platter, I like what normally would be the bottom of the cake to be the top as it holds more of the glaze.

GLAZE
Melt butter in small saucepan, stir in brown sugar and bring to boil over med. heat. Once all is melted and dissolved add evaporated milk stirring constantly until we’ll blended and thickened a little. Pour over top of warm cake.

When David and I bought our place back in 1999, our property had a pear tree on it. I looked for pear recipes and found this one. I made it for years and since pears have a season I would make several cakes and freeze them. I would give them when providing a meal for a family or take them to family or special gatherings. One year I took one to Marybeth’s birthday celebration and she suggested I enter it the State Fair of Texas cooking competition. So I did. Low and behold I won a FIRST place ribbon for it. It is in the 2019 State Fair of Texas cookbook. Truly one of the highlights of my life. I had more fun playing around with my ribbon even wearing it as an earring to my Sunday school class one Sunday. Lol
I was asked if I would donate one to the Woman’s Ministry group at our church for their auction to raise money our GA’s. It raised $300.00!
Now I usually get 3 or 4 people asking to purchase them during the holidays.
