Tropical Kodiak Power Muffins Recipe

Ingredients: 2 ripe bananas 1/2 cup chopped mango (frozen is fine) 1/2 cup crushed pineapple with juice 1/4 cup coconut syrup (*see options below) 1/3 cup sweetened shredded coconut 2 cups dry Kodiak Cake brand pancake mix 1 egg 1 cup milk (I prefer coconut milk, but any milk will do) 1/2 tsp salt 1 tsp vanilla 1 tsp coconut extract 1 tsp cinnamon
(*) Coconut pancake syrup can be hard to find and usually expensive. You can either make your own at home (just google a recipe) or substitute Coco Re'al Coconut Cream (usually in the alcohol section at grocery or Walmart). If none of that works, just use regular maple syrup instead.

Directions:Spray muffin pan with Pam or use paper liners. Preheat oven to 375.
In a blender, combine bananas, mango, pineapple & coconut syrup. Blend until smooth. (If the mixture is too thick add half of the milk into the blender too.)
Measure 1 3/4 cup of blended fruit mixture into a medium mixing bowl. Add remaining ingredients and mix well. Scoop into muffin pan and sprinkle tops with more shredded coconut.
Bake 22 minutes at 375 or until toothpick comes out clean. Cool on a rack. Store in refrigerator. |
